Recipe~ Day 2

Back in 1998, I obtained the following recipe from a Taste of Home cooking magazine. After making it (and tasting it) it quickly became one of my favorite recipes. As a young cook, I was never confident enough to cook without a recipe in front of me and after a couple of moves, I lost the recipe.

In 2005, I ventured onto the Taste of Home website, where I found a forum in which you could post recipe requests and what not. I thought it would be worth a shot to try to obtain the recipe. Not even a week after posting, someone had located the recipe and posted it for me, and once again, I had this yummy dish!

I chose it for my lunch recipe as it is great for potluck lunches!

Garden Risotto with Chicken

2 boneless skinless chicken breasts
2 Tbsp vegetable oil
1 large onion chopped
3 garlic cloves minced
2 can (10 oz each) Condensed Chicken broth, undiluted
2 cups broccoli florets cut into bite size pieces
1 3/4 cup uncooked orzo pasta
1 can (15 oz) whole kernel corn, undrained
1/4 tsp salt
1/4 tsp pepper
3/4 cup grated Parmesan cheese

Rinse chicken with cold water and pat dry with paper towels. Cut into 1” pieces. In a large nonstick skillet, heat on medium-high heat. Add onion and garlic; cook for 2 minutes. Add broth, broccoli and pasta. Reduce heat to medium; cover and cook for 6 minutes. Mix in corn, salt & pepper. Cook for 5 minutes or until done. Remove pan from heat. Stir in cheese.

I enjoy Taste of Home magazine. There are usually a lot of good recipes in them.

The Taste of Home is a good one but it doesn't beat Southern Living!

hmmm... I have never heard of Taste of Home, but sounds like I should locate it.

It was not 6:00am, I have it set for eastern time zone, but it says "(GMT-5:00)Eastern Time" so it was actually 9:00am... I didn't even wake up until 8:30am... LOL

As for southern living, I like the magazine, but I think you get a lot more recipes with Taste of Home... but I subscribe to both! :)

Yes, the Taste of Home magazines are wonderful...but I also receive both magazines. This sounds like a great one that I can prepare ahead and take to work for lunch. Glad you could find it again!

ooooo this sounds yummy! Ya know what, I don't get either magazine, but have cooked recipes from both and I have to say they've all turned out great! Taste of home does have more recipes, but southern living has those good ole' south style stuff!
